Gingerbread Biscuits

  • 125 gs Softened Butter
  • 1/2 cup. brown sugar
  • 1/2 cup. Golden Syrup
  • 1 Egg Separated
  • 2 1/2 cup.s Plain Flour
  • 1 1/2 tbsp.s YIAH Gingerbread Baking Spice
  • 1 tsp. Bicarbonate of soda
  • 1 cup. Icing Sugar
  • 3 Various food colour


Preheat oven to 180 degrees.
Beat butter and sugar until pale and creamy.
Add golden syrup and egg yolk and beat until combined.
Add flour, spice, bi-carb and stir until combined.
Knead on lightly floured surface until smooth then refrigerate for 30 mins.
While chilling make your icing by beating egg whites until soft peaks form. Gradually add sifted icing sugar and beat until thick and glossy.
Place into 3 or 4 separate dishes (depending on how many colours you wish to use) and add desired food colouring and refrigerate to harden.
Once dough is chilled roll out to about 5mm thick and cut-out desired shapes. Place on tray and bake for 10 minutes. Allow to cool completely before icing.
