Enchilada Casserole

Add a green pepper to the ground beef mixture or you could add some decried beans!


  • 1 lb. ground beef
  • 1 oz. tomato sauce
  • 1 Small can diced tomatoes(drained)
  • 2 cup.s Corn
  • 6 10 in flour tortillas
  • 1 Diced Onion
  • 2 tbsp.s YIAH Cinco Pepper Enchilada Dip Mix
  • 1 tbsp. YIAH Salsa
  • 4 cup.s shredded cheese
  • 1 tsp. Cilantro


Preheat oven to 350°. In a large skillet, cook ground beef and onion over medium heat until no longer pink; drain. Stir in tomato sauce and diced tomatoes. Add YIAH Cinco Pepper Enchilada, Salsa dip mix and cilantro. Salt to taste. Stir well and set aside.
Place two tortillas, overlapping as necessary, in the bottom of a greased 13×9-in. baking dish. Cover with one-third of the meat mixture; top with 1 cup corn; sprinkle with 1-1/3 cups cheese. Repeat layers once, then top with remaining tortillas, meat and cheese.
Bake, uncovered, 30 minutes or until bubbly.
